Fire up the BBQ (or your grill) and feast on this monkfish dish adorned with roasted peppers… This quick and easy dish is perfect for a lunchtime basking in the summer rays.
Ingredients
- 2 red onions
- 4 peppers (2 red, 2 yellow)
- 4 monkfish fillets
- 2 tbsp olive oil
- 4 sprigs of thyme
- 4 sprigs of rosemary
Method
Step one
Fire up your grill! Peel your red onions and cut into 2cm thick slices.
Step two
Cut up your peppers and place on a griddle, drizzling with olive oil and grilling with the onions for approximately 3 minutes. Turn your vegetables over and grill the other side for a further 3 minutes.
Step three
Add your monkfish to the grill and cook for 4-5 minutes then turn to cook the other side. Add a sprig of thyme and rosemary into the backbone of each fillet and cook for a further 4-5 minutes (or until cooked thoroughly).
Step four
Once your monkfish is cooked through, remove your peppers from the griddle and assemble on a plate with your monkfish and onions. Sprinkle it with salt and pepper to taste and enjoy in the summer sun.
