Buttery Garlic Clams

Clams are currently seasonal, so why not make the most of it and serve up this mouth-watering dish.

 

Ingredients 

  • 5 tbsp unsalted butter
  • 1 tbsp minced garlic
  • 1 cup white wine
  • 1 tbsp lemon juice
  • 3 dozen clams
  • ⅓ cup chopped parsley
  • 1 lemon (cut into wedges for garnish)

 

Method

Step one

In a large frying pan (with a lid), melt 2 ½ tbsp of butter on a medium heat. Add your garlic, and stir thoroughly until fragrant (or for 30 seconds).

 

Step two

Add the wine and lemon juice and bring your mixture to the boil.

 

Step three

Once boiling, add your clams and remaining butter, covering the pan with a lid. Steam until the clams have opened up (this can take between 7-8 minutes), occasionally shaking the frying pan.

 

Step four

Ensure that you throw away any clams that haven’t opened. Sprinkle with parsley and garnish with your lemon wedges.

 

Serve up this delicious dish with a warm French baguette, or even with pasta for a perfect tea-time treat.
