WHY ‘EXPORT BOX’?
Fished in the seas of the picturesque Sussex Coast these fresh, seasonal, and delicious fish are generally ignored by the UK fish eating population. The reason is their size. Despite being of legal size for landing according to UK law, we end up exporting these smaller fish by lorry to a huge fish market in France.
WHAT’S IN THE BOX
- 20x fillets weighing approximately 2kg (total weight).
- Each fillet will weigh approximately 100g.
To ensure we are protecting fish stocks you will be provided with a seasonal selection of fresh fish, caught within the last 48 hours.
Here are some of the species of fish you might see (entirely dependent on what the boats bring in);
- Whiting
- Brill
- Huss
- Monkfish
- Flounder
- Dabs
- Gurnard
- Skate
- Plaice
- Lemon Sole
- Dover Sole
USES
While these fillets are smaller (hence why they are usually exported) you can use them in very similar ways to other fillets of fish.
A single fillet from our ‘export box’ is the perfect size for a light lunch (maybe grilled with a side salad or some cous-cous). It’s also the perfect size as the protein in a meal for a child.
For a main meal, you may wish to have one and a half or two fillets per adult, depending on your appetite.
If you are making a meal by weight, such as a fish pie or a fishcake, then, of course, these fish are exactly the same as any other fillet you’ve used before.

STORAGE
Our fish is as fresh as you can get without fishing it yourself, so while we recommend eating it as early as possible, it will last in your fridge for up to two days.
If you think you will need to freeze some/all of your fish, then we recommend freezing them as soon as possible. The quicker you freeze them the fresher they will taste when you defrost them (in the fridge for 24hrs).

BAD WEATHER
Every now and then weather prohibits us from being able to fish, either entirely, or for certain species. On these rare occasions you will find some of our frozen fish in your box instead of fresh. Rest assured, these are still fish from our own boats, locally sourced, seasonal, and fresh at the time of freezing.
