Lobster Mac ‘n Cheese

Take a bash at this traditional dish with a twist, a perfect meal for a lazy afternoon dinner with a luxury spin.

 

Ingredients 

  • 800g cooked lobster
  • 700ml Whole milk
  • 1 Bay leaf
  • 1 tsp Black peppercorns
  • 35g Unsalted butter
  • 2 tbsp Plain flour
  • 100g Parmesan (grated)
  • 100g Gruyere (grated)
  • 300g Macaroni pasta 
  • Chives (finely chopped) 

 

Method

Step one

Break off your lobster claws, tapping them gently to remove the meat and cut into large pieces. Then cut the body in half lengthways, remove the shell and roughly cut the meat into chunky pieces.

 

Step two

Put the lobster shell into a pan with the milk, bay leaf and peppercorns. Bring this to the boil, remove from the heat and strain.

 

Step three

In a different pan, melt the butter and then add your flour. Stir this consistently until a roux is formed. Then, slowly add your milk to the pan, stirring well until you have a smooth sauce. Then stir in your cheeses and cook gently until the cheese has completely melted and the sauce is smooth again. Meanwhile, cook your pasta in a separate pan.

 

Step four

Drain your pasta and add it to the cheese sauce you prepared. Stir through, adding the chives and chopped lobster meat and tip it into a large baking dish. Sprinkle breadcrumbs and cheese on top and grill for 5 minutes (or until the cheese has melted and turned golden brown) – enjoy!
