Try out this easy and seasonal Monkfish recipe with decadent golden butter with herbs. Perfect served with New Jersey potatoes and a side salad.
Ingredients
- 300g Monkfish
- 2 Garlic cloves
- 2 Sprigs of thyme
- ½ tsp Finely chopped parsley
- ½ tsp Finely chopped chives
- ½ tsp Finely chopped chervil
- 30g Butter
- Olive Oil
- Salt & pepper
Method
Step one
Prepare your monkfish by cutting it into equal pieces. Season the fish with salt and pepper on both sides. Then heat some oil in a large pan over a medium heat. Add your monkfish to the pan and cook for three minutes, then turning and repeating on the other side.
Step two
As soon as you’ve turned the fish over, add your butter to the pan. Once the butter has melted, add the two whole cloves of garlic and sprigs of thyme. Let the butter begin to foam, and then start spooning the butter over the fish as it cooks. Do this until the fish is cooked through and the butter begins to smell nutty.
Step three
Remove the fish from the pan and place on a rack to rest for 3 minutes. Meanwhile, add the remaining herbs to the butter in the pan. Plate up your fish and spoon over the herb butter mixture.
